E150c Caramel ammoniacal"Caramels are divided into 4 categories according to the reagents used to produce them. The letter ""a"" indicates the basic recipe (E150a = regular caramel), ""b"" the use of sulphites, ""c"" the use of ammonia and ""d"" both. E150c, ammonia-based, may contain two undesirable neoformed substances: immunotoxic THI (acetyl-tetrahydroxibutylimidazole), and 4-MI (4-methylimidazole) suspected of being carcinogenic (classified C2b by the International Agency for Research on Cancer). In its re-evaluation, the European Food Safety Authority (Efsa) established a grouped Acceptable Daily Intake (ADI) for caramels as a whole but also a specific ADI for E150c due to the presence of THI. However, the exposure of children and adults may exceed the set ADI."
