E326 Lactate de potassium
Potassium lactate is the potassium salt of lactic acid (E270). Of natural origin, it is an antioxidant. It also acts as an acidity regulator, humectant and emulsifier. Its use is permitted in many foods. In general, lactic acid and its salts are metabolized without concern in the body and are considered safe.
