E341 Phosphate de calciumCalcium phosphate is mainly used as an antioxidant but it can also be used as an acidity regulator, anti-caking agent, emulsifier, firming agent, leavening agent, sequestering agent, stabilizer or thickener. Recent studies have shown the existence, within populations, of an increase in the level of phosphate in the walls of blood vessels. This would be potentially harmful as it is a cardiovascular risk factor, particularly in the case of renal failure. In 2019, the Efsa re-evaluated the safety associated with the consumption of phosphates as an additive and via the general diet. A new ADI, stricter than the previous one, is established for all phosphate intakes, with those coming from food additives contributing 6 to 30% of the total phosphate intake. Thus, in the current state of the authorized doses of use, the estimated exposure levels are likely to exceed the ADI for children and adolescents who are heavy consumers of carrier foods. In addition, the ADI expressed does not cover individuals suffering from moderate to severe renal function disorders. As a reminder, phosphate additives are authorized in more than 100 food applications. The categories contributing most to consumer exposure via additives are primarily bakery and pastry products, but also industrial cheeses and meat products.
