Iron gluconate is an iron salt of gluconic acid (E574). It acts as a stabilizer. It is mainly used as a color retention agent in olives, the only product in which its use is authorized. In order to avoid over-consumption of iron, an Acceptable Daily Intake (ADI) of 0.8 mg/kg bw/day has been defined for this additive. Indeed, it is now assumed that a sustained high intake of iron can lead to a risk of developing heart disease (iron overload cardiomyopathy). However, the consumption of E579 itself is considered safe.
